Ingredients

For the Noodles:

  • 1 cup (120g) buckwheat flour

  • 1/2 cup (60g) all-purpose flour

  • 1 tsp matcha powder

  • 1/3 cup (80ml) water (plus more if needed)

For the Sesame-Soy Dressing:

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp rice vinegar

  • 1 tsp honey or sugar (optional)

  • 1 tsp grated ginger

  • 1 clove garlic, minced

Toppings (Optional):

  • Sesame seeds

  • Thinly sliced green onions

  • Nori (seaweed) strips

Instructions

  1. Make the Noodles:

    • Mix buckwheat flour, all-purpose flour, and matcha powder in a large bowl.

    • Gradually add water, mixing until the dough comes together. Knead for 5–7 minutes until smooth.

    • Roll out the dough on a floured surface to about 1/8-inch thickness and cut into thin strips.

    • Boil the noodles in salted water for 2–3 minutes, then rinse under cold water to stop the cooking process.

  2. Prepare the Dressing:

    • In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey (if using), ginger, and garlic.

  3. Assemble:

    • Toss the cooked soba noodles with the dressing until evenly coated.

    • Garnish with sesame seeds, green onions, and nori strips.

  4. Serve:

    • Enjoy the noodles chilled or at room temperature.
