Ingredients
For the Noodles:
1 cup (120g) buckwheat flour
1/2 cup (60g) all-purpose flour
1 tsp matcha powder
1/3 cup (80ml) water (plus more if needed)
For the Sesame-Soy Dressing:
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp rice vinegar
1 tsp honey or sugar (optional)
1 tsp grated ginger
1 clove garlic, minced
Toppings (Optional):
Sesame seeds
Thinly sliced green onions
Nori (seaweed) strips
Instructions
Make the Noodles:
Mix buckwheat flour, all-purpose flour, and matcha powder in a large bowl.
Gradually add water, mixing until the dough comes together. Knead for 5–7 minutes until smooth.
Roll out the dough on a floured surface to about 1/8-inch thickness and cut into thin strips.
Boil the noodles in salted water for 2–3 minutes, then rinse under cold water to stop the cooking process.
Prepare the Dressing:
In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey (if using), ginger, and garlic.
Assemble:
Toss the cooked soba noodles with the dressing until evenly coated.
Garnish with sesame seeds, green onions, and nori strips.
Serve:
Enjoy the noodles chilled or at room temperature.
