Instructions

  1. Prepare the Batter:

    • In a separate bowl, whisk the eggs and milk. Gradually add the wet mixture to the dry ingredients, whisking until smooth.

    • Stir in the melted butter. Let the batter rest for 15–30 minutes.

  2. Cook the Crepes:

    • Heat a non-stick skillet over medium heat and lightly grease with butter.

    • Pour a small ladleful of batter into the pan, swirling to coat the surface evenly.

    • Cook for 1–2 minutes, or until the edges lift easily, then flip and cook for another 30 seconds.

    • Repeat with the remaining batter, stacking the crepes with parchment paper between each.

  3. Assemble the Crepes:

    • Spread a thin layer of cream cheese over each crepe.

    • Add smoked salmon slices, a sprinkle of capers, and fresh dill.

    • Fold or roll the crepes, and garnish with lemon wedges if desired.

  4. Serve:
