Instructions
Prepare the Batter:
In a large bowl, sift together the flour, matcha powder, and salt.
In a separate bowl, whisk the eggs and milk. Gradually add the wet mixture to the dry ingredients, whisking until smooth.
Stir in the melted butter. Let the batter rest for 15–30 minutes.
Cook the Crepes:
Heat a non-stick skillet over medium heat and lightly grease with butter.
Pour a small ladleful of batter into the pan, swirling to coat the surface evenly.
Cook for 1–2 minutes, or until the edges lift easily, then flip and cook for another 30 seconds.
Repeat with the remaining batter, stacking the crepes with parchment paper between each.
Assemble the Crepes:
Spread a thin layer of cream cheese over each crepe.
Add smoked salmon slices, a sprinkle of capers, and fresh dill.
Fold or roll the crepes, and garnish with lemon wedges if desired.
Serve:
Serve immediately as a light meal or appetizer.
