Ingredients
2 cups (500 ml) milk (dairy or plant-based, like almond or oat milk)
2 tbsp matcha powder (adjust to taste)
1/3 cup (70 g) granulated sugar (or your preferred sweetener)
3 tbsp cornstarch (or 4 tbsp if you prefer a thicker pudding)
1/4 tsp vanilla extract (optional, for added flavor)
Instructions
Mix the Dry Ingredients:
In a small bowl, sift the matcha powder to remove any lumps. Mix it with 2–3 tbsp of the milk to create a smooth paste.Prepare the Milk Mixture:
In a medium saucepan, combine the remaining milk, sugar, and cornstarch. Whisk until the cornstarch is fully dissolved.Add Matcha Paste:
Stir the matcha paste into the milk mixture, ensuring everything is well combined.Cook the Pudding:
Place the saucepan over medium heat. Stir constantly with a whisk or spatula to prevent lumps or sticking.Thicken the Mixture:
Cook until the mixture begins to thicken and reaches a pudding-like consistency. This usually takes 5–7 minutes. Once thickened, remove it from the heat and stir in the vanilla extract, if using.Cool and Serve:
Pour the pudding into serving cups or bowls. Cover with plastic wrap, pressing it gently onto the surface to prevent a skin from forming.
Let it cool to room temperature, then refrigerate for at least 2 hours.Optional Toppings:
Garnish with whipped cream, a sprinkle of matcha powder, or fresh fruit like strawberries or raspberries before serving.
