Ingredients
2 cups (250g) all-purpose flour (plus extra for dusting)
2 tsp matcha powder (adjust to taste)
3 large eggs
1/2 tsp salt
1 tbsp olive oil (optional, for smoother dough)
Instructions
Prepare the Dry Ingredients:
Sift the flour and matcha powder together into a large bowl or directly onto a clean countertop.
Make a well in the center of the flour mixture.
Add the Wet Ingredients:
Crack the eggs into the well and add salt and olive oil if using.
Combine:
Using a fork or your fingers, gradually incorporate the flour into the eggs, starting from the edges of the well.
Continue until the mixture becomes a shaggy dough.
Knead the Dough:
Transfer the dough to a lightly floured surface and knead for 8–10 minutes until smooth and elastic.
If the dough feels too sticky, add a little more flour. If too dry, add a teaspoon of water at a time.
Rest the Dough:
Wrap the dough in plastic wrap or cover with a damp cloth. Let it rest for 30 minutes at room temperature to relax the gluten.
Roll and Cut:
After resting, divide the dough into smaller portions. Roll each portion out using a pasta machine or a rolling pin to your desired thickness.
Cut into your preferred pasta shape (e.g., fettuccine or tagliatelle).
Cook:
Bring a large pot of salted water to a boil. Cook the pasta for 2–3 minutes, or until al dente.
Serve:
Toss with light sauces like olive oil, garlic, lemon butter, or a simple cream sauce to let the matcha flavor shine.
