Ingredients

  • 2 cups (250g) all-purpose flour (plus extra for dusting)

  • 2 tsp matcha powder (adjust to taste)

  • 3 large eggs

  • 1/2 tsp salt

  • 1 tbsp olive oil (optional, for smoother dough)

Instructions

  1. Prepare the Dry Ingredients:

    • Sift the flour and matcha powder together into a large bowl or directly onto a clean countertop.

    • Make a well in the center of the flour mixture.

  2. Add the Wet Ingredients:

    • Crack the eggs into the well and add salt and olive oil if using.

  3. Combine:

    • Using a fork or your fingers, gradually incorporate the flour into the eggs, starting from the edges of the well.

    • Continue until the mixture becomes a shaggy dough.

  4. Knead the Dough:

    • Transfer the dough to a lightly floured surface and knead for 8–10 minutes until smooth and elastic.

    • If the dough feels too sticky, add a little more flour. If too dry, add a teaspoon of water at a time.

  5. Rest the Dough:

    • Wrap the dough in plastic wrap or cover with a damp cloth. Let it rest for 30 minutes at room temperature to relax the gluten.

  6. Roll and Cut:

    • After resting, divide the dough into smaller portions. Roll each portion out using a pasta machine or a rolling pin to your desired thickness.

    • Cut into your preferred pasta shape (e.g., fettuccine or tagliatelle).

  7. Cook:

    • Bring a large pot of salted water to a boil. Cook the pasta for 2–3 minutes, or until al dente.

  8. Serve:

    • Toss with light sauces like olive oil, garlic, lemon butter, or a simple cream sauce to let the matcha flavor shine.
