This elegant and creamy dessert pairs the earthy flavor of matcha with the silky texture of panna cotta. It’s simple to make but looks and tastes like a dish straight out of a fine-dining restaurant.

Ingredients

For the Panna Cotta:

  • 2 cups (480 ml) heavy cream

  • 1 cup (240 ml) whole milk

  • 1/2 cup (100 g) granulated sugar

  • 2 tsp matcha powder

  • 1 tbsp hot water

  • 2 1/2 tsp (1 envelope) unflavored gelatin

For Garnish (Optional):

  • Sweet red beans (anko)

  • Fresh berries

  • Whipped cream

  • A sprinkle of matcha powder

Instructions

1. Bloom the Gelatin
In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water. Let it sit for 5–10 minutes until it softens.

2. Dissolve the Matcha
In another small bowl, sift the matcha powder to remove lumps. Add 1 tablespoon of hot water and whisk until smooth to form a matcha paste.

3. Heat the Cream Mixture
In a medium saucepan, combine the heavy cream, milk, and sugar. Heat the mixture over medium-low heat, stirring until the sugar dissolves. Do not let it boil.

4. Add the Matcha
Whisk the matcha paste into the warm cream mixture until evenly combined and the color is a uniform green.

5. Incorporate the Gelatin
Remove the saucepan from the heat and stir in the softened gelatin. Continue stirring until the gelatin is fully dissolved.

6. Pour and Chill
Strain the mixture through a fine-mesh sieve into a pouring jug to remove any lumps. Divide the mixture evenly among ramekins, glasses, or molds. Let them cool to room temperature before covering and chilling in the refrigerator for at least 4 hours, or until set.

7. Serve and Garnish
To serve, unmold the panna cotta by dipping the bottom of the ramekin into warm water for a few seconds, then invert onto a plate. Alternatively, serve directly in the glass. Garnish with sweet red beans, fresh berries, a dollop of whipped cream, or a light dusting of matcha powder for an extra touch of elegance.
