Matcha Pancakes Recipe
Ingredients
1 cup (125g) all-purpose flour
1 tbsp matcha powder
2 tbsp granulated sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup (180ml) milk
1 large egg
2 tbsp melted butter or neutral oil
1/2 tsp vanilla extract
Toppings (Optional)
Maple syrup
Whipped cream
Fresh berries (strawberries, blueberries, etc.)
Instructions
Prepare the Batter:
In a bowl, sift together the flour, matcha powder, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
Gradually combine the wet ingredients with the dry ingredients, mixing until just combined. Avoid overmixing to keep the pancakes fluffy.
Cook the Pancakes:
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2 minutes. Flip and cook the other side for 1–2 minutes, or until golden.
Serve:
Stack the pancakes on a plate, drizzle with maple syrup, and top with whipped cream and fresh berries.
