Ingredients
Dry Ingredients:
1 ½ cups (190g) all-purpose flour
1 tbsp matcha powder
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
Wet Ingredients:
2 large eggs
½ cup (120ml) milk or almond milk
½ cup (120g) sugar (or substitute with honey or maple syrup)
Optional Add-ins:
½ cup white chocolate chips or nuts
¼ cup chopped dried fruits (e.g., cranberries)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Line a muffin tray with paper liners or grease it lightly.
Step 2: Mix Dry Ingredients
In a large mixing bowl, sift together:
Baking powder
Baking soda
Salt
Stir to combine.
Step 3: Mix Wet Ingredients
In another bowl, whisk together:Eggs
Milk
Sugar
Oil or butter
Vanilla extract
Whisk until the mixture is smooth.
Step 4: Combine Wet and Dry Mixtures
Gradually pour the wet mixture into the bowl with the dry ingredients.
Use a spatula or spoon to gently fold them together until just combined. Do not overmix—the batter should be slightly lumpy.
If using add-ins like chocolate chips or nuts, fold them in now.
Step 5: Fill Muffin Tray
Divide the batter evenly among the muffin cups, filling each about ¾ full.
Step 6: Bake
Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Rotate the tray halfway through for even baking.
Step 7: Cool and Serve
Remove the muffins from the oven and let them cool in the tray for 5 minutes.
Transfer them to a wire rack to cool completely.
