Matcha-Infused Dashi Broth Recipe

Ingredients
4 cups (1 liter) water
1 piece kombu (dried kelp, about 4 inches)
1/2 cup bonito flakes (optional for non-vegan dashi)
1 tsp matcha powder
1 tbsp soy sauce (optional)
Thinly sliced green onions (for garnish)
Instructions
Prepare the Dashi Broth:
In a pot, combine water and kombu. Let it soak for 30 minutes to release the flavor.
Heat the pot over medium heat until it almost reaches a boil. Remove the kombu before the water boils.
Optional Step:
If using bonito flakes, add them to the hot water. Simmer for 2–3 minutes, then strain the broth to remove the flakes.
Infuse with Matcha:
In a small bowl, dissolve the matcha powder with a bit of the hot dashi broth. Whisk until smooth.
Stir the matcha mixture into the dashi broth. Add soy sauce for extra umami, if desired.
Serve:
Pour the matcha-infused dashi broth into bowls and garnish with green onions.
