Ingredients:
1 tsp matcha powder
1 cup shredded unsweetened coconut (plus extra for rolling)
½ cup almond flour
2 tbsp honey or maple syrup
2 tbsp coconut oil (softened)
1 tsp vanilla extract (optional)
Pinch of salt
Instructions:
Prepare the Mixture:
In a mixing bowl, combine shredded coconut, almond flour, matcha powder, and a pinch of salt. Mix thoroughly.
Add the Wet Ingredients:
Add the softened coconut oil, honey (or maple syrup), and vanilla extract. Mix until the ingredients come together to form a sticky dough.
Form the Balls:
Using your hands or a small scoop, roll the dough into bite-sized balls (about 1 inch in diameter).
Roll in Coconut:
Roll each ball in extra shredded coconut for a decorative and flavorful coating.
Chill:
Place the energy balls on a plate or tray lined with parchment paper. Refrigerate for at least 30 minutes to firm up.
Serve or Store:
Enjoy them straight from the fridge, or store them in an airtight container in the refrigerator for up to 1 week. They can also be frozen for longer storage.
Tips:
For added texture, mix in a tablespoon of chopped nuts or seeds.
Adjust the sweetness by adding more or less honey/maple syrup.
